I made dinner

I made this dish last week.  We were having a friend over for dinner and I was supposed to volunteer at the babe's day care passing out fundraiser pizza.  So, I knew I wouldn't have a lot of time to make a nice meal and lately me and the crock pot have become BFF.  It seems like there are an infinite amount of combinations you can throw together in that thing to come up with an amazing meal.  I had pinned a recipe called Chicken Fajita soup.  But, sadly, I could not find it.  What's a girl to do?  Improvise.  Here is what I came up with.  BTW, it was good. 

Chicken & Rice Mexican Casserole (or some clever name that doesn't suck)
4-6 frozen chicken breasts
1 box chicken stock
1 can corn kernels, rinsed and drained
1 can black bean, rinsed and drained
1 can Rotel
2 cups rice (I used Jasmine rice because it's what I had.  You can use any kind you have.)
Taco condiments - cheese, sour cream, salsa, jalapenos, etc)

Put the chicken, chicken stock, corn, black beans, and Rotel in the crock pot.  Then look over and admire your beautiful child who likes to hang out in the kitchen while you cook (or just come over to ilookbadinhats and check out mine - lord knows there are enough!)...



Then cook on low while you are at work (8+ hours).  I came home after work to turn it down to warm and throw in the rice.  Then ~2 hours later I came home ready to dive into this.  The rice had soaked up all of the liquid from the chicken stock and was cooked and yummy.  Serve this over chips and pile on your favorite toppings.  I think that the taste of the chicken and rice casserole was pretty mild.  When I make this again, I will either add a second can of Rotel, or add 2-3 jalapenos when cooking.  What can I say, I like it spicy! 



Give it a try... super easy.  I am all about easy these days.  I like to smooch that sweet baby face, not spend a ton of time sweating over the stove.  So, I let dinner sweat while I am out makin' that money!  What are you guys making in your crock pots???

  1. HAHA! I have Chicken Tortilla Soup in the crockpot right now...waiting for us to get home and eat it! I found the recipe on my favorite site, Pinterest (have you heard about it?!) and this particular recipe I repinned from my friend Meredith (you should meet her - she rocks!). I haven't tried the recipe yet, but it looked pretty good!

  2. KT, it is starting to get a little creepy... You and I are basically living the same life, only 60 miles apart! :) I must know how the Chicken Tortilla Soup tastes! I would love to try it again, if I could find the stinkin' recipe!
