I have garlic breath

Garlic is a must in 99.9% of the dishes that I make (you may have noticed). They say that garlic is good for you, which is nice to know. I can say that I have one vice that actually does my body good. Most of the others, do more harm than I would like to admit, but you only live once, right?
The garlic in this recipe is not overpowering. In fact, it is pretty mild. *Side note* If you add garlic early to a recipe, the garlic taste is minimal, almost nutty. If you add it later on, the garlic taste is stronger.
This particular dish is really flavorful and perfect for the changing weather. If you are looking to make this vegetarian, don't. :) The bacon really makes this dish. I promise, you don't want to omit the tastiness of the bacon. You can use turkey bacon (I haven't, so I cannot say how it will taste) or panchetta (Italian bacon is the best way I can describe it). We used regular bacon and I loved it. The original recipe is from a past issue of Real Simple (my bible), but I cannot find it now, so I improvised slightly since I could not remember it all.

Ravioli with Bacon and Spinach

4-6 slices of bacon, cut into 1/2 inch pieces
2 garlic cloves, diced
1 bag frozen cheese-stuffed ravioli
1 container fresh spinach
1 tbsp lemon juice

1. Start the water boiling for the ravioli. Cook per instructions.
2. While water is boiling / ravioli is cooking, heat up a pan to cook the bacon. Add all the bacon and stir the pan so as not to burn.
3. After about 5 minutes, add the garlic. Continue to cook for about 3 minutes, stirring continuously. You do not want the garlic to burn.
4. Turn the heat down to low. Add the spinach. It will slowly begin to wilt down in the pan. Turn the spinach around in the bacon grease. (You will be amazed at how little the spinach looks once it wilts down. I cannot imagine how much spinach they have to use to make the frozen blocks).



5. Sprinkle the lemon juice over the spinach / bacon mix. Stir.
6. Add the ravioli to a dish. Spoon the spinach / bacon mix on top.
7. Eat, and try not to go for seconds! We LOVE this dish!
